More Slow Cooker Winners

I'm a big fan of getting families around the table together to share a meal, and I'm not shy about telling people that my crock pot is often what makes that possible for us.  Here are a few of our family's favorite slow cooker recipes.  If they can help alleviate a bit of mealtime stress and help get your family around the table together, that makes my day.

Chinese Cashew Chicken- This is an easy, go-to favorite.  It's very much like my mom's version of chow mein.  You can of course leave out the mushrooms and/or add water chestnuts if you want an extra crunch.

1 can bean sprouts, drained and rinsed
2 cups sliced cooked chicken
1 can condensed cream of mushroom soup (I always use Campbell's Healthy Request)
1 cup sliced celery
1/2 chopped green onions with tops (I usually forget to buy these and therefore leave them out)
1 can (4 oz.) sliced mushrooms, drained and rinsed
3 Tablespoons butter
1 Tablespoon soy sauce
1 cup cashews

Combine everything but the cashews in a slow cooker.  Mix well; cover and cook on low 4-5 hours.  Before serving, stir in the cashews.  Serve over rice.  Source: Crock Pot Slow Cooker Best Loved Recipes.

Salsa Chicken- I made this for the first time recently, and it will now become one of our go-to meals.  It is very easy and yummy.

5 - 6 chicken breasts
1 - 15 1/4 oz can corn, drained
1 - 15 1/4 oz can black beans, drained and rinsed
1 - 16 oz. jar salsa (whatever style you prefer)

In a bowl, mix together all of the ingredients except for the chicken. Put the chicken in a freezer bag. Pour the mixture into the bag and seal it. When ready to cook, put the thawed contents of the freezer bag in the slow cooker. Cover and cook on low for 6 - 8 hours. When done, take 2 forks and shred the chicken and mix all together.

Serving suggestions: Sprinkle with shredded cheddar cheese. Serve with rice or tortilla chips.  Source:

Sausage and Peppers- Thomas loved this one.  It could be that he loves "bangers" aka sausages and I don't cook them very often.  :)

6 - 8 Italian sausages
1 red pepper, sliced
1 green pepper, sliced
1 yellow pepper, sliced
1 onion, sliced
2 - 15 1/4 oz cans diced tomatoes, do not drain
2 Tbs Italian seasoning
4 cloves of garlic, minced

Place all of the ingredients into a freezer bag and freeze. When ready to cook, place the thawed ingredients in a slow cooker on low heat for 6 hours.

Serving suggestions: Serve over rice or noodles and add some cheese. Crusty bread or a side salad also goes nicely with this.  Source:
